Dengying Beef, (Chinese Dēng yǐng niú ròu), is a traditional local food in Dazhou City, Sichuan Province. The beef slices are as thin as paper, red and bright in color, spicy and crispy, chewed carefully, and endless aftertaste.Dengsha, that is, shadow puppetry, uses light to project silhouettes of people made of animal skins or cardboard onto the curtain. The name "Deng Ying" for this beef shows that the slices of meat are so thin that it can reveal objects under the light, just like a curtain in a shadow puppet show.
